When life gives you lemons, make lemonade!

When the Thomases give you apples, make APPLESAUCE!

First of all, I will confess that if I didn't have a toddler I'd probably never bother making homemade applesauce. But Suzanne suggested it, and I thought, "Hmm, Addie LOVES applesauce." These days it's her snack of choice even over yogurt so I decided to give it a go.

Cooking up the applesauce itself was really quite simple. It was the preparation of the apples that took some time. The coring, the quartering, the peeling, ect. I used my apple corer, but still had to take off the peel, and I'm admittedly not all that skilled with a knife. Chopping yes, but surgical precision for peeling no. However, I am proud to be able to report that I was able to put my obsessive compulsive tendencies on the back burner (at least temporarily) ~ I peeled those bad boys without worrying about bits of skin being left on here and there. That being said, it still took me a good 30 minutes to prep the apples.

So...would I make my own applesauce again? Yes, I think so! It was quite satisfying to taste the fruits of my labor. Plus, Addie ate it right up!

If you have any apples leftover, we made this (http://smittenkitchen.com/2008/09/moms-apple-cake/) this week and it was a winner. I'm with you on the apple peeling though—too tedious!

That looks good! I made applesauce yesterday, too! I felt arthritic last year after preparing 5 pounds of apples for apple butter. I don't think I'm going to make that again this year, haha!

i heard you can freeze them in slices and use them for pies, cobblers, etc. in the winter so i’m thinking that sounds faster than making applesauce…though i did think of making applesauce a few weeks ago when someone else gave me lots of apples.
