Zucchini on Steroids

Harvest time is here and many of our friends have produce overload. Doris brought us lots of potatoes, a bag full of huge carrots, and 3 massive zucchini from her garden. Sweeeet!

Addie and I tackled two of the zuccs this morning, but the third will have to wait a day or so because my triceps were tired from shredding those suckers. I know...the word wimpy comes to mind. But seriously, these things could be used as weapons. Steroids I tell you.

Anyways, the two I used gave me 10 cups of shredded zucchini. Wow! You normally can expect to get about 3 cups from two medium zucchini. I bagged most of it for the freezer then Addie & I went ahead and baked two loaves of bread. Addie's the resident "stirrer." She also insists on carrying the ingredients from the pantry to the counter. It's fun having a pint-sized helper.

Fantastic! My mom gave us lots, too, and since I can imagine us eating any more zucchini side dishes, I've had bread on my to-do list but haven't gotten to it. Yours look delicious. I like the idea of freezing the shreds for later!
You know with Addy carrying a zucchini that size, you might be nearing child labor issues. wink

No worries Lindsey ~ I can totally relate to mommy brain mush. And I've heard it only gets worse! On another note, I think I may try a chocolate zucchini cake recipe. I'll let you know if it's worth it.
